Redefining Culinary Education Through Sensory Experience, Design Thinking and Precision Cooking
A human-centred approach to food, culture, nutrition and sustainability through immersive workshops, research and innovation.
Mobile Teaching Kitchen (MTK) Switzerland is a regional adaptation of the MTK methodology that combines culinary education, sensory exploration, design thinking and precision cooking into an experiential learning framework.
Developed through collaborations in Switzerland, the UK and across Europe, the initiative explores how food environments, culture, science and personal experience shape eating behaviour, health and sustainability.
The programme connects gastronomy, nutrition science, architecture of taste, behavioural insights and cultural identity into practical, interactive learning experiences. It also works alongside communities to better understand food behaviours, local needs, cultural practices and barriers related to nutrition, health and food access.
Background & Current Developments
2021

Contribution to the first MTK Recipe Book and development of cooking video content.

Participation in the Cambridge University Online Cooking Event, promoting the MTK book and showcasing cooking demonstrations.
2022–2024

Cooperation established with the Swiss Association for Cooperation on Nutrition Education.

Training sessions delivered within hospitality and community settings, testing culinary methods and educational approaches for the Swiss MTK adaptation.
2025

First pilot workshop held in Biel, Switzerland, exploring sensory learning, Central European cuisine and sustainable nutrition through an experiential format.

Second pilot culinary workshop delivered during the 11th NNEdPro Annual Summit on Food, Nutrition & Health in Dundee, Scotland, focusing on smell, taste perception, flavour creation and cultural identity in relation to health outcomes.

Exercise books and workshop materials developed for both pilot masterclasses.

Abstracts submitted and presented on preliminary research, pilot activities and the Swiss MTK adaptation during the 11th NNEdPro Annual Summit in Dundee / St Andrews, Scotland.

MTK Switzerland is strengthening partnerships with academic and professional institutions, including collaboration opportunities with the Bern University of Applied Sciences. Current and planned areas of collaboration include: food behaviours and community health, culinary innovation, sustainable food systems, behavioural and sensory research and precision nutrition and cooking methodologies.

GNOME Initiative
MTK Switzerland also aims to support the implementation and regional adaptation of GNOME, the Global Observatory for Medical Nutrition Education, in collaboration with international partners like PAN International and others.

Mobile Teaching Kitchen Initiative
MTK Switzerland is exploring adapting the Mobile Teaching Kitchen model for Switzerland and Central Europe, bringing practical culinary and nutrition education directly into communities through accessible, hands-on learning.
The initiative aims to support underserved populations through community participation and locally adapted food solutions.
International Awards Symposium
MTK Switzerland is involved in organising the 2026 annual International Awards Symposium in Bern, Switzerland, to recognise faculty, professional, and student members for their excellence and continued engagement in the fields of nutrition education and public health.
